Sick

Well, folks, I'm sick.

I'm coughing, sneezing, sore throat, congested, dizziness, full-on yuckiness sick. And there's no rest for the wicked. I'm heading into the MAC (Multnomah Athletic Club) to bartend tonight. The MAC is the oldest, biggest (550,000 square feet) and most exclusive Sports Club in the nation. I bartend in the Men's Bar. (And yes, women are allowed in. Now.)

I never get sick. What's going on? Perhaps I'm just running myself ragged. I do have a lot on my plate:

I love having a busy schedule and am really happy to be working on all of these projects; that's why I've taken them on. That's why I'm frustrated that I'm sick; I need more time (and energy) to keep on working! How can I tell my body to get better? What does it need? tea? vitamin C? Pho? All of the above?

Raw ‘Un’ Baking

2 weeks ago, I headed up to the Back to Eden kitchen to do a little un-baking for the storefront.

Cranberry-Pistachio Nessie Bars

I fell in love with Lara Bars a while back, and was amazing at their simple ingredients. Then I was amazing at how much I was spending on them.

Solution: Make my own version! Introducing: Nessie Bars. This kind was in honor of Christmas—the bright red and juicy cranberries mixed with the salty and crunchy green pistachios made these bars gorgeous. Garrett sold them as squares down at the storefront, and I wish I would have taken a picture—they were so festive!

These bars are vegan (duh), raw, soy-free, gluten-free, and would have been sugar-free if the cranberries weren’t sugar-sweetened.

The text I got from Garrett the day they hit the storefront for the first time:

A woman came in today and bought one of your raw cookies. She ate it in the store. She then bought the rest of them! No, really. She said, ‘I’ll take them all.’

Um, can I get a holla?

These cookies are vegan (duh), raw, sugar-free, soy-free, and would be gluten-free if oats aren’t rolled in wheat (Why on earth would people do that? I just found that out).

And finally…. Brownie Bites!

These babies are chocolate-y walnut-y little morsels all rolled up in coconut. I love em! I added some chocolate extract to them, but I don’t think I would again because they tasted kind of alcohol-y. Which isn’t necessarily a bad thing, I guess.

My brownie bites are vegan (duh), raw, sugar-free, soy-free, and gluten-free.

I love baking in Back to Eden’s kitchen—it’s so shiny and clean and has all the ingredients I could ever want to play with. :)

Vegan Not-tella Giveaway!

I’ve had this, dear ones, and let me tell you; it is major yum. It’s delicious with almond butter on toast (seriously delicious), it’s delicious out of the jar (I do that often.  Who’d do that?!), it’s delicious with bananners in a sandwich… pretty much anything you’d do with Nutella you’d do with this kinder and gentler chocolate hazelnut spread.

Opportunities... or 5 Reasons Why...

It's been just over a month since I left the BridgePort Ale House.
In that time I've accomplished a lot and I feel so lucky, happy, blessed, productive, excited, accomplished and busy because of it!
5 Reasons why I feel happy (plus 2 extras at the end):
DEMAND STUDIOS
I applied for and was accepted to write freelance articles for Demand Studios. Demand Studios owns websites like e-how. I had to come up with a writing resume (much easier than I thought it would be at first) and now I can choose to write articles on pretty much anything whenever I want. I'm paid a small amount per article, which definitely helps out! 
So far I've written:
It's a great freelancing opportunity (thanks Lindsey at Happy Herbivore for the suggestion!) that I am happy to have.
CULTUREMOB PORTLAND CITY EDITOR
I recently became the Portland City Editor of CultureMob; the online urban entertainment website and blog. Writing an article a week, I'll focus on Portland life. So far I've written about Musicfest NW (going on right now!) and the Best of Belmont.
If you have any suggestions or tips, I'd love to hear them. Please leave them in the comments below.
This is so much fun already!

PORTLAND VEGAN EXAMINER
The Examiner is a nationwide online resource with many different specializations. After a lengthy application process and background check, my first article was just published today. I guess it was actually too long, so it's been broken up into 4 articles. All four articles center around the theme of eating vegan on the cheap. I've thrown in several easy recipes as well.
I'm aiming to write 3 or 4 articles a week focusing on all things vegan in Portland. If you have any suggestions for story ideas here I'd love to hear them.
I'm so excited to begin writing for the Portland Examiner.
EPICURIOUS VEGAN
Of course I'm also writing this here blog. There's all sorts of fun and awesome opportunities that go with writing Epicurious Vegan. Most recently: Susan, part of the founding team of Go Max Go, was kind enough to grant me an interview, which I just posted here. Keep checking back; I'll have more interviews, recipes, and perhaps some giveaways in the near future.
BACK TO EDEN
Back to Eden Bakery Boutique is opening next Tuesday, September 22nd. Garrett and John, the owners, are dear friends of mine. I've been helping them with the process since April and I am incredibly excited for this vegan bakery boutique to finally open! It's definitely crunch time right now, but come Tuesday everyone can see the hard work and passion that these boys have put into Back to Eden, and I'm so thankful to be a part of it.

And 2 to grow on:
* I've taken up running! I love it. Who would have thought? I really need new shoes though! Mine are 2 years old and hurt my knees every time I go out.
* This time in a month I'll be in Turkey! Wandering through ancient bazaars, sipping turkish coffee, kayaking over sunken cities, visiting sea tortoises, walking along the Angean Sea coast... I love traveling to new and exciting places and immersing myself in the culture. As nerve-wracking as it can sometimes be, traveling opens up so many doors and pathways in your head and in your heart. I can't wait.

Books v Baking


Three years ago, I was feeling lost and old and unsure what to do with my life. One night I went online to gradschools.com and looked at every single option for continuing education in almost every single field.
I came upon Library Science. “Aha!” I exclaimed, convinced I had finally found my passion. I love books. Probably to an unhealthy degree. I love working with people. I love research. Logic dictates that I would therefore love Library Science. I started off by sending away for info from schools all across the U.S. Hawaii, New Jersey, Texas, even Wisconsin. There weren’t many accredited schools in the Pacific Northwest, and I wasn’t too sold on the others, so I let my travel bug just put out some feelers for accredited schools abroad.

Found one.

In London.

I wrote essays, contacted professors from Pacific I hadn’t seen in 8 years, collected transcripts… I worked, hard.

And I got in. I was accepted to City University London to take my place for a year in the Master’s program.

Floating on air. I would go to school for a year, take out loans, buy some fake spectacles, put my hair in a bun, and start shushing people with my pointer finger pressed to my lips.
What could go wrong?

Plenty.

I ran into problems with my passport, with my social security card, with my name, with visas, with the school. I kept swimming upstream though, convinced I could make it in time for the 2008 school year. I’d need to legally change my name, apply for and receive a new passport, and obtain a new social security card before I could even think about my visa. I had about one month to do 3 months worth of work. Ever the fan of procrastination, I decided to stay in my beloved Portland one more year and actually give myself time to accomplish everything.

I was happy with my decision. Happy because I could bike around Portland in the summer, drunkenly attend Musicfest NW, go camping and hiking and swimming, move in with my dear friend freshly arrived from Alaska, spend more time exploring the city and the Gorge and the coast. Happy to spend some more time working at the BridgePort Ale House, continuing to learn the ins and outs of managing a restaurant. Happy to explore my growing passion for veganism in a city that seems made for it, happy to meet more people and drink more champagne cocktails.
Head down, I pressed on. Courthouses were visited, judges were presented, forms were filed, money was paid, things got done. Triumphant, I celebrated with a few champagne cocktails. I am now the proud owner of a passport with a passably cute photo (the joy!); my social security benefits will actually start accruing now that the government can track me; and my name actually matches on all my legal and non-legal documents. I am now legally Janessa Philemon-Kerp.

I continued puttering along, looking for scholarships, deducing how on earth I could take out $50,000 in loans, contentedly working my way toward London through the winter and into the spring of Portland.

One day in March I met up with some friends who own a bakery. Back to Eden had been up and running for about six months, with distribution to local grocery stores and coffee shops. Garrett specializes in… well, deliciousness. He makes the most amazing cupcakes, macaroons, scones, birthday cakes, and really anything that you think would be good is even more delicious in his hands. John manages and runs the whole operation. This little slice of vegan heaven was about to go big time. They decided to open a storefront. A storefront that would sell all these sassy baked goods; that would have a vegan softserve machine (YUM); that would feature harvested produce from their organic garden; that would be a community.

A lifelong baker with a passion for veganism, for people, and with marketing experience, I biked over on a Sunday with a notebook of ideas I had jotted down. This little idea session turned into a bright burst of talking, brainstorming, excitement, and possibilities.

My mind went wild. Do I want to go to school in London and work with computers and data retrieval? Do I want to change my life around completely, again, for a possibility of passion? Or would I rather stay in Portland, with my perfect fit just handed to me? I needed time to think it over.

Agonizing. When you work so long and so hard on life plans, it can be hard to let them go. Especially if it involves a foreign country, and excitement, and something different. But here was this opportunity to work with two close friends, to work for a cause that I truly believe in, to bake, to garden, to work with people, to spread the word of this delightful little bakery boutique. Basically, here was my passion plopped in my lap.

I took it. And I haven’t looked back. I’m still at the Ale House. My last day is August 8th. Truthfully, it will bittersweet. I’ve been with BridgePort for almost four years, and I couldn’t ask for a better place to have spent those years. I will be moving over to Alberta Street here in my beloved Portland. Back to Eden Bakery Boutique is open for business in mid-August. I will be a busy little bunny. A very happy busy little bunny.

I feel incredibly lucky to be in this town, to be utilizing my skills and talents in a way that seems custom-made for me, to have what I care about and believe strongly in fully reflected in my job.
So please, come August, stop in and see me, grab a cupcake or a savory treat, browse our books and handmade gifts, or just say hi. I will probably be behind the counter, peacefully lost in a good book.

Bakery, Cart and Magazine

Exciting Announcements!

1. My friends John and Garrett are opening up a brand new vegan bakery next month. It's going to be probably the most delicious bakery you will frequent. Plus--get this--there's going to be VEGAN SOFT SERVE. And maybe even homemade waffle cones. Located on Alberta, Back to Eden Bakery is going to be big. Please stay tuned for more updates, and help this local business by two rad gentlemen flourish and be well!

2. There's a new mostly vegan cart opening up in the 12th and Hawthorne area--I found this out courtesy of Jess over @ Get Sconed!. Called "Whiffies Deep Fried Pie Cart", it will be serving deep fried yumminess, including empanadas, (vegan) chicken, and misc other delicious things, I'm sure.
Opening in mid April or early May, it sounds fantastic.

3. I received the new Vegetarian Times today, and while flipping through it, noticed an article called "Say Cheese." I thought, "Really? A whole article on cheese? Guess I'll be skipping that one." Then I noticed--it's all about the ease of making nut cheeses! And it has recipes! So I'll totally read it, devour it with my eyes, and then I'll attempt to make my own sometime soon. This Veg Times also has an article about the many uses of coconut milk (or maybe just a lot of recipes for it, either way I'm stoked) and I'm super excited about this article as well! Nice job, Vegetarian Times!
